5 easy recipes for Christmas coziness
Date balls (10-12 pcs)
10 fresh dates, 200 ml blended nuts (alternatively 250 ml rolled oats), 2 tbsp coconut oil, 2 tbsp raw cocoa powder, 1 tsp vanilla powder, 1 tbsp coffee, 100 ml toasted coconut chips.
Blend nuts into flour, add remaining ingredients and blend. Form into balls and roll in coconut. Chill for at least 30 minutes.
Spiced tea with cinnamon and ginger
Boil 1 liter of water with 2 cinnamon sticks, a piece of ginger, 10 cardamom pods, and 3 cloves for a few minutes. Strain and serve.
Gluten-free almond cake (10 servings)
4 eggs, 4 tbsp agave syrup, 200g butter, 250g ground almonds, 1 tsp baking powder, zest and juice from 2 lemons, 2 tbsp poppy seeds.
Preheat the oven to 160°C. Whisk eggs and agave syrup. Mix in butter and almond flour, stir in the egg mixture. Add baking powder, lemon, and poppy seeds. Bake for 30 minutes.
Chocolate-dipped mandarins with coconut
5 mandarins, 100 ml chocolate, shredded coconut, 1 tsp coconut oil. Melt chocolate with coconut oil, dip the segments, sprinkle with shredded coconut, and let set in the cold.
