Cashew balls with chocolate and lingonberry powder
These delightful cashew balls with lingonberry powder – few ingredients and quick to whip up. Sugar-free luxury fika!
Dip half in lingonberry powder and half in beetroot powder for a nice contrast.
The recipe makes 12-15 balls.
Ingredients
- 2 dl cashew nuts
- 10 dates
- 2 pinches of flake salt
- 0.5 tbsp lingonberry powder
- 100 g dark chocolate 70%
- Garnish: berry powder of your choice
Instructions
- Place the cashew nuts and dates in a food processor and blend until a smooth mixture forms.
- Stir in the flake salt.
- Roll into evenly sized balls and let them chill in the freezer for 30-45 minutes.
- Chop the chocolate and melt it in a saucepan.
- Dip the balls in the chocolate and then sprinkle berry powder over them.
We use our Swedish lingonberry powder in this recipe.
