Coconut milk
Coconut flour became popular in Sweden with the LCHF trend. The flour is a byproduct of coconut milk production – the coconut meat is dried and ground after the oil has been pressed out.
Baking with coconut flour
Coconut flour absorbs much more liquid than wheat flour and therefore cannot be substituted directly in recipes.
Recipe: Coconut Waffles
2 eggs, 200g cream cheese, 0.5 dl coconut flour, 0.5 dl desiccated coconut, 0.5 dl almond flour, 0.5 tsp vanilla, 1 tsp baking powder, 0.5 dl cream. Separate eggs, whisk egg whites until foamy. Mix other ingredients, fold in egg whites. Bake with butter.
