Much of the food we eat is industrially produced, processed, and sterilized with preservatives and additives. Often it has been frozen. This means that it does not contain enough enzymes for the stomach and intestines to properly digest the food. Enzymes act as catalysts in chemical processes in the body. Some scientists call them "the sparks of life" because they initiate so many important processes.
