Christmassy gingerbread truffles with lingonberry powder

Do you like sneaking bites of gingerbread dough? Then you'll love these gingerbread balls rolled in lingonberry powder. An easy-to-make Christmas treat!This recipe makes 9–10 delicious gingerbread balls.Ingredients
10 fresh dates
2 dl almond flour
1.5 tsp gingerbread spice
1 tbsp coconut oil
Lingonberry powder for garnish
Instructions
Place all ingredients in a food processor or blender.
Process until the dates are finely chopped.
Knead and roll into even-sized balls.
Roll the balls in lingonberry powder or other garnish.
Tip! Store the balls in the fridge. We use our Swedish lingonberry powder in this recipe.

1 banana
2 dl frozen raspberries
2 dl frozen mango
2.5 dl almond milk
1 tbsp beetroot powder
Instructions
Blend all ingredients until smooth.
Pour and serve. Easy as pie!
Tip! Replace the almond milk with another plant-based milk according to your preference. We use our organic beetroot powder in this recipe.

Creamy vegan ice cream with lingonberry powder

Summer may be over, but what does it matter? You can eat ice cream all year round! This recipe for creamy and sweet vegan ice cream contains lingonberry powder, but you can of course try other berry powders too.Our Swedish lingonberry powder is made from lingonberries from northern Sweden that have been carefully dried to preserve the nutrients.The finished ice cream tastes quite a lot of coconut.The recipe serves 3–4 portions.Ingredients
12 pitted dates
1 dl cashews
400 ml coconut milk
2 tbsp lingonberry powder
1 pinch vanilla powder
Instructions
Blend all ingredients until smooth.
Pour the ice cream into a container and place it in the freezer for 5–6 hours.
Garnish with a few pinches of lingonberry powder and serve!
Tip: If the ice cream is left in the freezer for a long time, it can become very hard; in that case, let it thaw for a while before serving. We use our Swedish lingonberry powder in this recipe.

Rosehip bliss balls – an energy snack packed with rosehip powder

Date balls with rosehip powder – a tasty and easy snack.Rosehip is one of the most vitamin C-rich berries available. One hundred grams of dried rosehips contain potassium, calcium, vitamin C, magnesium, and antioxidants.This recipe makes ten delicious rosehip balls.Ingredients
8 dried dates
2 tbsp rosehip powder
0.5 dl dried mulberries
0.5 dl rolled oats
0.5 dl desiccated coconut
2 tbsp coconut oil
Instructions
Place all ingredients in a food processor or blender.
Blend until the dates are thoroughly finely chopped.
Knead and roll into evenly sized balls.
Roll the balls in rosehip powder or other garnish.
Tip! Heat the coconut oil until it melts before pouring it into the blender. When the balls are ready, store them in the refrigerator. We use our organic rosehip powder in this recipe.
