Who doesn't love ice cream? Combine it with coconut milk and matcha powder. Creamy, exotic, sweet, and tangy! This recipe yields about 5 dl of ice cream.Ingredients1 can coconut milk (approx. 400 ml)1-4 tsp matcha powder0.5 dl sugar2 tbsp maple syrup (or regular syrup)0.5 tsp vanilla sugar1 tsp squeezed lemon juice1 tbsp vodka (optional, helps with texture when frozen)A pinch of saltPreparation
Ensure the bowl for your ice cream maker has been in the freezer for at least 12 hours, preferably 24 hours.
Whisk together coconut milk, matcha powder, sugar, syrup, vanilla sugar, lemon, salt, and vodka (if using). Strain the mixture if it's lumpy. Pour into the ice cream maker and let it run according to instructions. Pour into a freezer-safe container and freeze for at least 1-2 hours.
If the ice cream freezes overnight, let it sit at room temperature for at least 15 minutes before serving.

Grill Rub (recipe)4 tbsp raw sugar, 4 tbsp chili powder, 4 tsp paprika powder, 2 tsp garlic powder, 4 tsp ground cumin, 0.5 tsp each dried oregano/basil/thyme, 2 tsp salt.Combine all ingredients. Cashew balls with chocolate and lingonberry powder

These delightful cashew balls with lingonberry powder – few ingredients and quick to whip up. Sugar-free luxury fika!Dip half in lingonberry powder and half in beetroot powder for a nice contrast.The recipe makes 12-15 balls.Ingredients
2 dl cashew nuts
10 dates
2 pinches of flake salt
0.5 tbsp lingonberry powder
100 g dark chocolate 70%
Garnish: berry powder of your choice
Instructions
Place the cashew nuts and dates in a food processor and blend until a smooth mixture forms.
Stir in the flake salt.
Roll into evenly sized balls and let them chill in the freezer for 30-45 minutes.
Chop the chocolate and melt it in a saucepan.
Dip the balls in the chocolate and then sprinkle berry powder over them.

Whole oat groats are an alternative to regular rolled oats.This recipe makes 6-7 energy bars.Ingredients
50 g hazelnuts
80 g dried apricots
30 g naked oats
1.5 tbsp cocoa
2 tbsp blueberry powder
2 tbsp coconut oil
Instructions
Blend nuts and dried apricots in a food processor.
Add cocoa, naked oats, and blueberry powder.
Stir in coconut oil (heat the oil first, it melts at 25°C).
Press the mixture into a form lined with baking paper.
Let the cake rest a little in the fridge before cutting it into suitable pieces.

Summer may be over, but what does it matter? You can eat ice cream all year round! This recipe for creamy and sweet vegan ice cream contains lingonberry powder, but you can of course try other berry powders too.Our Swedish lingonberry powder is made from lingonberries from northern Sweden that have been carefully dried to preserve the nutrients.The finished ice cream tastes quite a lot of coconut.The recipe serves 3–4 portions.Ingredients
12 pitted dates
1 dl cashews
400 ml coconut milk
2 tbsp lingonberry powder
1 pinch vanilla powder
Instructions
Blend all ingredients until smooth.
Pour the ice cream into a container and place it in the freezer for 5–6 hours.
Garnish with a few pinches of lingonberry powder and serve!
Tip: If the ice cream is left in the freezer for a long time, it can become very hard; in that case, let it thaw for a while before serving. We use our Swedish lingonberry powder in this recipe.

8 dried dates
2 tbsp rosehip powder
0.5 dl dried mulberries
0.5 dl rolled oats
0.5 dl desiccated coconut
2 tbsp coconut oil
Instructions
Place all ingredients in a food processor or blender.
Blend until the dates are thoroughly finely chopped.
Knead and roll into evenly sized balls.
Roll the balls in rosehip powder or other garnish.
Tip! Heat the coconut oil until it melts before pouring it into the blender. When the balls are ready, store them in the refrigerator. We use our organic rosehip powder in this recipe.
