Matcha ice cream

Who doesn't love ice cream? Combine it with coconut milk and matcha powder. Creamy, exotic, sweet, and tangy! This recipe yields about 5 dl of ice cream.Ingredients1 can coconut milk (approx. 400 ml)1-4 tsp matcha powder0.5 dl sugar2 tbsp maple syrup (or regular syrup)0.5 tsp vanilla sugar1 tsp squeezed lemon juice1 tbsp vodka (optional, helps with texture when frozen)A pinch of saltPreparation Ensure the bowl for your ice cream maker has been in the freezer for at least 12 hours, preferably 24 hours. Whisk together coconut milk, matcha powder, sugar, syrup, vanilla sugar, lemon, salt, and vodka (if using). Strain the mixture if it's lumpy. Pour into the ice cream maker and let it run according to instructions. Pour into a freezer-safe container and freeze for at least 1-2 hours. If the ice cream freezes overnight, let it sit at room temperature for at least 15 minutes before serving. We use our organic matcha powder in this recipe.

Conscious Rocky roads400g dark quality chocolate, approx. 4 tbsp honey, 2 tbsp coconut oil, goji berries, pistachios, cacao nibs, almonds, sea salt flakes. Melt the chocolate. Mix in honey and coconut oil. Add nuts, berries, and sea salt flakes. Spread on baking paper and let set. Cut into squares. Ginger pralines200g cashews, 200g fresh dates, 2 tsp ground ginger, 0.5 dl rolled oats, dark quality chocolate, sea salt flakes. Blend cashews and rolled oats into flour. Add ginger and dates, blend into a sticky mixture. Roll into balls and let rest in the fridge for 1 hour. Melt the chocolate and dip the balls. Sprinkle with sea salt flakes and let cool. We use our organic goji berries and cacao nibs in this recipe.

A cup of matcha teaAll you need is hot water, matcha powder, a whisk, and a bowl/cup.Temperature and whiskingBrew the tea when the water temperature is around 60-70°C. The amount of matcha is about 1 tsp per 0.5 dl of water. Whisk it into the water, preferably with a bamboo or latte whisk, until a light foam forms.Always add the matcha powder before the water, otherwise, it will become lumpy. Matcha ChocolateWhite chocolate and matcha – an irresistible combination. This recipe makes 36 pieces.Ingredients400g organic white chocolate125 ml whipping cream25 g butter2 tbsp matcha powder + 2 tsp for garnishPreparation Chop the white chocolate into smaller pieces. Heat the whipping cream almost to boiling point. Add the chocolate and butter, mix until smooth. Sieve in 2 tbsp of matcha powder and mix until evenly colored. Pour into a baking dish lined with parchment paper, smooth the surface. Refrigerate for 4-5 hours or overnight. Slice into pieces and dust with the remaining matcha powder. This recipe for creamy and sweet vegan ice cream contains lingonberry powder, but you can of course try other berry powders too.Our Swedish lingonberry powder is made from lingonberries from northern Sweden that have been carefully dried to preserve the nutrients.The finished ice cream tastes quite a lot of coconut.The recipe serves 3–4 portions.Ingredients 12 pitted dates 1 dl cashews 400 ml coconut milk 2 tbsp lingonberry powder 1 pinch vanilla powder Instructions Blend all ingredients until smooth. Pour the ice cream into a container and place it in the freezer for 5–6 hours. Garnish with a few pinches of lingonberry powder and serve! Tip: If the ice cream is left in the freezer for a long time, it can become very hard; in that case, let it thaw for a while before serving. We use our Swedish lingonberry powder in this recipe.
